During the fall season, there are so many different types of great food, especially sweets! There’s one thing I love to cook during this time. Here’s how to make a pumpkin roll!

 

Ingredients 

¼ a cup of powdered sugar

¾ a cup of all-purpose flour 

½ teaspoon of baking powder

½ teaspoon of baking soda 

½ teaspoon of ground cinnamon

½ teaspoon of ground cloves 

¼ teaspoon salt

3 eggs

1 cup granulated sugar

⅔ cup pure pumpkin 

1 cup walnuts chopped (optional )

1 package of 8 ounces of cream cheese at room temperature 

1 cup powdered sugar, sifted 

6 tablespoons butter or margarine, softened

1 teaspoon vanilla extract 

Powdered sugar (optional for decoration)

Preheat oven to 375 F. grease your jellyroll pan ( 15 x 10 inch) and line it with wax paper. Grease and flour paper. Sprinkle a thin cotton kitchen towel with ¼ cup of powdered sugar. Combine flour, baking powder, baking soda, cinnamon, cloves, and salt in a small bowl. Beat the eggs in granulated sugar in a large mixing bowl until it’s thick. Beat in the pumpkin. Stir in the flour mixture and spread evenly onto a pan. Sprinkle with nuts (if you’re not allergic). Bake for 13 to 15 minutes or until the top of the cake springs up after being touched. Immediately loosen and turn the cake onto the prepared towel. Beat cream cheese, 1 cup powdered sugar, butter, and vanilla extract in the smaller mixing bowl until smooth. Carefully unroll the cake and spread the cream cheese mixture over the cake. Re-roll the cake and wrap it in plastic wrap to refrigerate for at least an hour. Sprinkle with powdered sugar if wanted.
