Remembering Eva Kor

             Eva Kor was born on January 31st,1934. She has a twin sister named Miriam Eva and two older sisters named Liz and Edith. Her parents were Alexander and Jaffa Mozes. Eva and her family were sent to the Auschwitz Concentration Camp. It was a 70-hour trip. They didn’t have any food or water for the whole trip. Eva and her family tried to stay together. Eva had a fever. They said she wouldn’t survive two weeks but she ended up breaking the fever. Eva and Miriam had experiments done on them since they were twins. The person who experimented on them was Dr. Josef Mengele. Eva Kor was liberated from Auschwitz on January 27, 1945.              There’s a Holocaust Memorial Museum in Washington D.C. There’s also a Candles Holocaust Museum in Terre Haute, Indiana.  Eva Kor founded and opened the museum in 1995. The Candles Holocaust Museum is an education center. It educates people about the Holocaust.  Eva Kor is best known for being a Holocaust survivor and advocate; she was also a public speaker. Eva Kor’s definition of forgiveness was “It was a way of healing oneself from pain and trauma.”(Wikipedia)

Martin Luther King Jr.

         In honor of Martin Luther King Jr., President Ronald Reagan signed a law in 1983  and The day was first observed three years later on January 20, 1986.Martin Luther King was officially observed in all 50 states for the first time in 2000.  Martian Luther  King was born in Atlanta, Georgia. He was the son of a Baptist Minster.  King received a doctorate degree in theology and in 1955 helped organize the first major protest of the African American Civil Rights Movement.  The successful Montgomery bus boycott. King was influenced by Mohandas Gandhi. (History.com) Martin Luther King Jr. advocated for civil disobedience and nonviolent resistance to segregation in the South. The peaceful protests helped but were often met with violence.  King appealed to Christian and American ideals and won growing support from the federal government and northern whites. (History.com) In 1963, Bayard Rustin and A. Philip Randolph led the massive march on Washington for jobs and freedom; the event’s grand finale was King’s famous I have a Dream speech. (History.com)  Two hundred and fifty thousand people gathered outside the Lincoln Memorial to hear the stirring speech. In 1964 the civil rights movement achieved two of its greatest with the successful ratification which abolished the poll tax and the Civil Rights act of 1964, which prohibited racial discrimination in employment, and education and outlawed racial segregation in public facilities. Seasonal Soups

Broccoli and Cheese Soup

Now there’s texture in the way this soup tastes that makes you feel good. A creamy, melted cheese with soft broccoli as a healthy, but surprisingly tasty treat. When picking a piece of broccoli with a utensil the broccoli is coated lightly in yellow or white cheese your choice.

Recipe ingredients

  • 1 whole onion, diced
  • 1 stick butter
  • 1/3 c. flour
  • 4 c. whole milk
  • 2 c. half-and-half
  • 4 heads of broccoli cut into florets
  • 1 pinch nutmeg
  • 3 c. grated cheese (mild cheddar, sharp cheddar, jack, etc.)
  • A small dash of salt (more if needed)
  • Freshly ground black pepper
  • 2 c. chicken broth, if needed for thinning

Directions

Melt butter in a pot over medium heat, then add in the onions. Cook the onions for 3 to 4 minutes, then sprinkle the flour over the top. Stir to combine and cook for 1 minute or so, then pour in milk and half-and-half. Add nutmeg, then add broccoli, a small dash of salt, and plenty of black pepper.


Cover and reduce heat to low. Simmer for 20 to 30 minutes, or until the broccoli is tender. Stir in cheese and allow to melt.

Taste seasonings and adjust if needed. Then either serve as is, mash it with a potato masher to break up the broccoli a bit, or transfer it to a blender in two batches and puree completely. (If you puree it in a blender, return it to the heat and allow it to heat up. Splash in chicken broth if needed for thinning.) Enjoy!

 

Tomato Soup

This soup is warm, comfortable, and very good when you are sick or stuck in the cold winter. It’s like sitting next to a fire with a warm blanket. There is something that instills nostalgia and a sense of comfort.

Ingredients

  • 1 tbsp. Butter
  • 1 tbsp. Olive Oil
  • 1 clove Garlic, Minced Fine Or Grated
  • 1 whole Onion, Finely Diced
  • 3 whole Large Carrots, Peeled, And Finely Diced
  • 2 tbsp. Tomato Paste
  • 3 cans (28 Ounces Each) Whole Tomatoes
  • 32 oz. fluid Vegetable Or Chicken Broth
  • 1 c. Water
  • 1/2 c. Heavy Cream
  • Salt And Pepper, to taste
  • 2 tbsp. Minced Fresh Parsley
  • 2 tbsp. Chopped Fresh Basil
  • Croutons
  • 1/2 whole Baguette, Sliced Into Rounds
  • 1/2 c. Freshly Shredded Parmesan Cheese
  • Fresh Basil, For Garnish

Directions

In a large pot, heat butter and oil over medium-high heat, then add onion, garlic, and carrots. Stir and cook for 5 minutes. Add tomato paste and stir it in, cooking for another 2-3 minutes. Add canned tomatoes with their juice, broth, and water. Stir together and bring to a boil, then reduce the heat, cover the pot, and simmer for 15-20 minutes, longer if you have time. Use an immersion blender to puree, still leaving some texture to the tomatoes. Add cream, salt, pepper, parsley, and basil, and simmer for another 5 minutes.

To make the croutons, drizzle crostini rounds lightly with olive oil. Place little piles of Parmesan in a nonstick skillet. Place a crostini round on top of each pile. Turn on the heat to medium. Press with a spatula as you melt the cheese into each round. When set, flip to the other side to toast.

Serve soup with one or two croutons on top and a little bit of basil.
